I'm going to Scotland for a week or so. How much harder is Ben Nevis than Snowdon?

Both are easy if you go up the easy routes. Ben Nevis is a fair bit higher (you start lower and finish higher) but it's just a case of getting on with it. It's not exactly technical or anything. And of course, the ease of any mountain is massively dependent on what the weather decides to do.

I have a week in Scotland so a bit of flexibility on when I/we go up. Is the terrain on Ben Nevis more like Scafell Pike with the loose scree or more of a defined path like the Pyg track on Snowdon?

The easy route up Ben Nevis (also known as The Tourist Path and the only one I've ever done) is easier than the Pyg Track, I think, other than being a lot longer. It's very clearly marked all the way up until the top where it's all boulder fields but that's not a problem as you can either see the summit or you can follow your compass.
